Balsamic-Braised Farm-Grown Onions



  • 2 bunches fresh-picked onions, red or white or both
  • Balsamic vinaigrette
  • Raw Farm-made bacon
  • Fresh thyme sprigs


The onions used in this recipe are freshly picked with their green tops still on. These have a different texture than commercial onions from the grocery store.

  1. Cut the tops and tails off the onions and cut in half, top to bottom.
  2. Gently toss them with balsamic vinaigrette and sprigs of fresh thyme. 
  3. Lay the onions in a single layer in a baking dish.
  4. Pour enough balsamic vinaigrette over the onions to cover them about half-way.
  5. Place pieces of bacon over the top of the onions, and cover tightly with tin foil.
  6. Roast at 350 for about 1 ¼ hours.
