Caesar Dressing

  • ½ C vegetable oil
  • 1 clove garlic, slightly crushed
  • 2 egg yolks
  • 2 tbsp fresh lemon juice
  • 2 tbsp white wine vinegar
  • ¼ tsp dry mustard
  • Dash worcestershire sauce


  1. Combine oil and garlic in jar with tight-fitting lid
  2. Refrigerate several hours or overnight
  3. Whisk remaining ingredients in a small saucepan until blended. 
  4. Cook over very low heat, stirring constantly until mixture bubbles at the edges. 
  5. Remove from heat immediately and let cool 15-20 minutes
  6. Remove garlic from the refrigerated oil and discard. 
  7. Add egg yolk mixture to the oil in the jar. 
  8. Shake until blended.

This will keep for several days covered.
