Green Bean Walnut Salad


  • 1 1/2 lbs green beans cut into bite size pieces (about 6 cups)
  • 1/2 C vegetable oil
  • 1/4 C chopped walnuts
  • 2 tbsp vinegar (herb, cranberry, pineapple sage, or other red vinegar)
  • 3 tbsp fresh dill (or 1 tsp. dry), chopped
  • 3 tbsp fresh parsley, chopped
  • 1/2 C scallions (including some green), chopped
  • Salt and freshly ground pepper to taste
  • Sprigs of fresh dill or parsley for garnish


  1. Cook beans for 3-10 minutes or until tender.
  2. Drain beans and cool in a shallow dish.
  3. Put remaining ingredients in blender or food processor, and blend until almost smooth, leaving pieces of onion and walnut.
  4. Taste and season with salt and pepper as desired.
  5. Pour mixture over beans and chill for 2 hours or more.
  6. Garnish and serve.
