Groovy Grain Goodness


  • 2 tsp extra-virgin olive oil, or canola oil
  • 1/2 C broken whole-wheat spaghetti pieces
  • 1/3 C finely diced onion
  • 1 ½ C broth
  • 1 C brown rice
  • 1/4 tsp salt
  • 1 bay leaf
  • 1 tbsp chopped fresh parsley


  1. Heat oil in a saucepan over medium-high heat.
  2. Add pasta and onion; cook, stirring, until starting to brown, about 3 minutes.
  3. Add broth, rice, salt and bay leaf; bring to a boil. Reduce heat to low, cover and cook until the liquid is absorbed and the rice is tender, 18 to 20 minutes.
  4. Let sit for 5 minutes. Discard the bay leaf. Fluff with a fork and stir in parsley.
