Harvard Beets

Ingredients

  • 6 medium beets
  • 3 tsp cornstarch
  • 3 tbsp sugar
  • Salt (optional)
  • 4-5 tbsp vinegar
  • 1 tbsp butter

Instructions

  1. Boil beets until tender. Drain, reserving about 1/3 liquid
  2. Slice or cube the beets
  3. In a saucepan, combine cornstarch, sugar and a little salt if desired.
  4. Stir in reserved beet liquid, vinegar and butter.
  5. Cook, stirring slowly, until thick and bubbly. Continue to cook for 2-3 minutes more.
  6. Stir in the cooked beets and cook until heated through.
