Kate’s Bloody Mary Salad

Ingredients

  • 1 C finely chopped red onion
  • 3 tbsp sherry vinegar, divided
  • 2 lbs cherry or grape tomatoes (about 4 pints), halved
  • 1 C chopped celery hearts (inner stalks and leaves)
  • 1/2 C chopped brined green olives plus 2 tbsp. olive brine
  • 2 tbsp prepared horseradish
  • 1 tbsp worcestershire sauce
  • 1 tsp hot pepper sauce
  • 1/2 tsp celery seeds
  • 1/4 olive oil
  • Salt and pepper

Instructions

  1. Mix onion and 1 tbsp. sherry vinegar in large bowl.  Let macerate 10 minutes, tossing often. 
  2. Add tomatoes, celery, and olives.
  3. Whisk remaining 2 tbsp. vinegar, olive brine, horseradish, and next three ingredients in a medium bowl. 
  4. Slowly whisk in oil. 
  5. Add to bowl with tomato mixture; toss to coat. 
  6. Season with salt and pepper.

Can be made ahead.  Cover; chill.
