Muffuletta

Ingredients

For the Olive Salad

  • 2 C large, pimento stuffed green olives, slightly crushed and well drained.
  • 1 C pickled cauliflower
  • ½ C capers
  • ½ stalk celery, thinly sliced diagonally
  • 1 large carrot, thinly sliced diagonally
  • 1 tsp celery seeds
  • 1 tsp oregano
  • 1 tbsp fresh garlic, peeled and minced
  • ¼ tsp ground black pepper
  • ½ C pepperoncini, drained and left whole
  • ½ C large, greek, black olives, pitted and drained
  • ½ C cocktail onions
  • ¼ C olive oil
  • ¼ C vegetable oil

For the Sandwich

  • 1 round loaf of bread (Italian)
  • ¼ lb mortadella
  • ¼ lb ham
  • ¼ lb salami
  • ¼ lb mozzarella
  • ¼ lb provolone
  • 1 C olive salad

Instructions

For the Olive Salad

  1. Combine all ingredients except oils in a large bowl and mix well. 
  2. Place in a glass jar and cover with the blend of two oils. 
  3. Store, tightly covered in refrigerator. 
  4. Let marinate at least 24 hours.

For the Sandwich

  1. Split loaf horizontally.
  2. Spread each half with olive salad. 
  3. Fill with meats and cheeses. 
  4. Place the halves together, press lightly and cut.
