Short Dough Crusts (for Tarts)


  • ¾ lb butter, softened
  • 1 C powdered sugar
  • 1 lb flour ~roughly 4 ½ cups plus 2 Tbls

  1. Beat butter and sugar till pale and fluffy
  2. Add flour and mix till just combined
  3. Press into sprayed tart pans in a thin layer so that you can just see the shadow of the pan
  4. Freeze till firm before baking in a 350 degree oven for 12-15 minutes

Crust Variations:

Chocolate Short Dough: remove 2 Tbls flour and add ¼ cup cocoa powder and ¼ tsp salt

Spiced Short Dough: Add spices as desired not exceeding 1 Tbls all together. A nice combination would be 1 ½ tsp cinnamon,  1 tsp nutmeg, ½ tsp cloves (3 tsp = 1 Tbls)
