Spinach Waldorf Salad


  • 1/3 C plain yogurt or sour cream
  • 1/3 C mayonnaise
  • 1 tsp grated lime zest
  • Juice of one lime
  • 1/2 tsp honey
  • 1 apple  (do not peel) Cut into bit size pieces
  • 1/3 C thinly sliced celery
  • 1/2 C raisins
  • 1/2 C pecans, toasted
  • 6 C Bartlett's organic baby spinach


  1. Whisk together the mayo, yogurt, zest, juice and honey.
  2. Combine apples, celery, raisins, and nuts in a large bowl.
  3. Blend gently with about half the dressing.
  4. Just before serving, toss with the spinach and add dressing if the mixture is too dry.

Keep leftover dressing for up to a week to use as a dipping sauce.
