Tomato Basil and Feta Salad

Ingredients

  • 5 lbs tomatoes, chopped
  • 6 cloves garlic, minced
  • 1 bunch fresh basil, mined
  • 3/4 C olive oil
  • 1 1/2 lbs feta cheese, crumbled

Instructions

  1. Combine all ingredients except feta.  Let sit 1 hour for flavor to blend.
  2. Just before serving, toss with feta.
  3. Serve on a bed of lettuce as a side dish or spread on toasted Pain D’Avignon sourdough bread.

Serves 8-10
