Tomato Basil Pasta Salad

Ingredients

Salad:

  • 12 oz bowtie pasta
  • 2 C fresh basil leaves (1 bunch)
  • 3 large tomatoes cut into bite size chunks
  • 1/2 C vinaigrette (see below)
  • 1/2 C toasted pigñoli nuts (optional)
  • 1 C fresh mozzarella, cubed (optional)

Vinaigrette:

  • 1/2 C vegetable oil
  • 1/4 C balsamic vinegar
  • 2 tsp dijon mustard
  • 1 tsp salt
  • Ground pepper to taste

Instructions

  1. Combine all vinaigrette ingredients with a whisk and chill.
  2. Cook pasta according to package directions.  Drain and cool.
  3. Wash basil leaves and pat dry. 
  4. Combine cooked pasta, basil, tomatoes and vinaigrette. 
  5. Add nuts and mozzarella if desired.
  6. Toss, chill and add seasonings.
