Nantucket Cranberry Pie

INGREDIENTS

Bottom Layer

  • 2 cups Cranberries (Fresh or Frozen)
  • ½ cup Sugar
  • ½ cup Walnuts, chopped

Next Layer

  • ¾ cup (1 ½ sticks) softened butter
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon Vanilla extract

Topping

  • 1 cup flour
  • 1 teaspoon kosher salt
  • ½ teaspoon cinnamon
  • ½ teaspoon nutmeg

Top of the topping

  • 1 Tablespoon sugar
  • ½ teaspoon cinnamon

INSTRUCTIONS

Preheat oven to 350 degrees.

Toss cranberries, sugar and walnuts together.

Pour into greased 8” square pan

(Option…add 1 apple, peeled and diced, or up to 1 additional cup of any fruit you have on hand)

Combine softened butter, 1 cup sugar and 2 eggs with 1 tsp vanilla extract

Add flour, kosher salt and spices.

Pour over the cranberry mixture

Mix 1 Tbl sugar and 1/2 tsp cinnamon and sprinkle on top.

Bake about 35 min

Serve with fresh whipped cream, vanilla ice cream or Crème Fraiche.

Any leftovers are great for breakfast!
