Wines & Rinds – A Wine and Cheese Tasting by Bartlett’s Farm

This week we have two long-standing faves from both the cheese & wine world – year-round staples from makers & farmers we love to support. Spring Brook Farm’s Ashbrook is an old standard we simply must have around through the winter. Styled after famed French Morbier, this cheese screams chilly evening snack. As we adore versatility, this cheese is another that is just as good melty over some roasted potatoes as it is as a pre-dinner snack. Raw milk, ash middle, savory, mushroom notes.
To go with, we have our darling Pommier Chablis. Hand Harvested, organically grown Chardonnay makes a delightful option for a winter white. Full of briny minerality with quintessential Chablis acidity this is sure to please a crowd. The bouquet of rich white fruits should complement Ashbrook quite nicely.
