Orange Vinaigrette Dressing

This is an unusual salad dressing that can be used on fresh greens or mesclun and is equally good over fresh fruit.

Ingredients:

2 tablespoons raspberry or cranberry vinegar

3 tablespoons freshly squeezed orange juice (important that it be fresh)

1/4 teaspoon salt 

1/4 teaspoon pepper 

3 tablespoons olive oil 

3 tablespoons light vegetable oil

2 tablespoons minced mint leaves 

Directions:

  1. Whisk vinegar, orange juice, salt and pepper together.
  2. Gradually whisk in oil until blended
  3. Add mint

Yields approximately 3/4 cup
