Vegan Double Chocolate Muffins

• 2 1/2 C Flour
• 2 tsp Baking Soda
• 1 1/2 tsp Kosher Salt
• 2 C Organic Sugar
• 2/3 C Dark Cocoa Powder, Sifted
• 2 tsp vanilla
• 2/3 C Olive Oil
• 1 1/2 C cold coffee
• 1 C smashed ripe bananas
• 1 1/2 C vegan dark chocolate chips
• 1/8 C flour
• 2 tsp apple cider vinegar

Yield = 11 – 12 muffins
Sift the 2 1/2c flour, baking soda and salt into a bowl and set aside.
In a different bowl combine the sugar, sifted cocoa, vanilla and olive oil. Whisk until combined.
Add smashed bananas and mix until combined.
Add half of the coffee and whisk until combined.
Add all the sifted dry ingredients and mix until almost combined, slowly add the rest of the coffee and mix until combined.
In a separate bowl toss the 1/8c of flour and the chocolate chips together, fold into the above.
Add the apple cider vinegar and mix until combined
Scoop into prepared muffin tins (if not using muffin cups spray with non- stick spray).
Bake in a 350 degree oven for 40 minutes.
Let cool slightly and enjoy!
